Tzatziki is probably of Turkish origin. It is an appetizer with pita bread, or can be used as a sauce for gyros and spanakotiropita.
1 cup drained yogurt
1 unpeeled, medium cucumber chopped fine
2 cloves garlic, minced
juice of 1/2 lemon
1 teaspoon salt
1/4 cup olive oil
pita bread
Preheat oven to 350 degrees.
1. Drain yogurt by placing in a cheese cloth and let the water drip through.
2. Mix the yogurt, cucumber, garlic and lemon juice in a medium bowl. Chill.
3. Open the pita bread and brush with oil. Slice into strips. Place on cookie sheet and bake until crisp. Serve with the tzatziki.
