peanut oil for frying
1 pound sweet potatoes, peeled
1/2 cup flour
1 egg beaten
salt and pepper to taste
1. Heat 2 inches of oil in a heavy sauce pan to 375 degrees.
2. Grate the sweet potatoes into a medium sized bowl, cover them with boiling water and let them stand for 15 minutes. Drain off the water and slowly add the remaining ingredients, stirring to make sure they are well mixed. You should have a thick paste that will hold its shape when picked up with a tablespoon. If it is too thin, add a bit more flour.
3. Drop the mixture, a few tabelspoons at a time, into the hot oil and cook the fritters for 3-5 minutes, or until they float to the surface. Turn them once lightly browning them on each side.
4. Drain on paper towels and serve hot. Great with fig preserves!
