sunflower pasta salad
Serves 4 to 6

chicken preparation

2 skinless boneless chicken breasts
2 garlic cloves
2 tablespoon olive oil…1 tablespoon for mixture and 1 for sauteeing chicken
1 tablespoon dijon mustard
Salt
Pepper

1. In a bowl combine olive oil, mustard, salt and pepper

2. After slicing the chicken breasts into strips, marinate with mixture

3. Heat olive oil in pan with garlic cloves and sautee marinaded chicken strips until tender and cooked through. Remove from pan

pasta preparation

8 ounces of fresh pasta
2 tablespoons sunflower oil
3 crushed garlic cloves
1 tablespoon lemon juice
Salt
Pepper
1⁄2 cup sunflower seeds
Petals from 2 sunflowers
5 shredded basil leaves

1. Cook pasta according to directions on the package.

2. In large bowl, combine oil, salt, pepper, crushed garlic and lemon juice. Toss in cooked pasta and sunflower seeds

3. In a steamer set atop boiling water, steam petals for 2 minutes. Remove from heat.

To assemble salad

1. Mound pasta on serving platter.

2. Top artfully with steamed petals and chicken.

3. Chill for 1 hour.

4. Sprinkle with basil leaves and serve.
