makes about 4 dozen cookies

1 pound (4 sticks) butter softened
2 1/2 cups sugar
1 egg and 1 egg white
1 1/2 teaspoons vanilla
2 tablespoons ground cardamom
3 1/2 cups flour

1. Cream butter and sugar in the bowl of an electric mixer until fluffy. Add eggs, vanilla and cardamom.

2. Add flour slowly until combined. The dough should not be sticky. Adjust the flour until the texture is right. Wrap the dough and refrigerate 2 hours or overnight.

3. Preheat oven to 375 degrees.

4. Line cookie sheet with parchment. Roll dough into 1 inch balls and place on the prepared cookie sheet. Bake 8 - 10 minutes or until golden brown.
