In pre-Soviet Russia, salad was unheard of except by those priviledged enough to travel to Western Europe. Since the Revolution, a salad can be any combination of cubed vegetables, boiled eggs, and a meat, with dressing, always served chilled. This is the standard "Russian salad".

5 potatoes
3 carrots
4 eggs, boiled and cubed
1 pound boiled meat (ham or brisket)
1/2 pound green peas
2-3 dill pickles (or cucumbers with a pinch of fresh dill added)
salt to taste
mayonnaise and sour cream

1. Boil potatoes and carrots. Cool and peel potatoes. Chop potatoes, carrots, eggs, meat, and pickles into 1/2 inches squares. Add green peas and salt.

2. Stir enough mayonnaise and sour cream together to dress only the portion of salad you are going to eat. Mix ingredients and refrigerate for 1/2 hour.
