lemon sorbet
This recipe is very easy, the only kicker is that to make sorbet you need an ice cream maker. But fear not! If you don't have one of those contraptions, just freeze it in a glass dish and using a fork, break it up occasionally... instant lemon granita!

2 cups water
2 cups sugar
2 cup fresh lemon juice
2 tablespoons lemon zest

1. Prepare the simple syrup by placing the water and the sugar into a heavy boiler over a medium high heat. Bring to a boil, stirring frequently, until the sugar has completely melted. Remove from the heat and allow to cool. Refrigerate until cold.

2. Combine the syrup, the lemon juice and the zest in a large bowl. Mix thoroughly. Pour the mixture into the bowl of an ice cream machine. Freeze according to the manufacturer's directions.

3. After the sorbet has frozen and reached a smooth consistency, transfer it to an air tight container and place in the freezer. Allow the sorbet to firm up a bit and then serve!
