1 lemon
8 green cardamom pods
2 cinnamon sticks
2/3 cup honey
4 medium pieces of crystalized ginger
4 tablespoons of water
1. Peel 3 strips of rind from the lemon.
2. Crush the cardamom pods with the blade of a heavy knife.
3. Put the lemon rind, cardamom, cinnamon sticks and honey in a sauce pan with 4 tablespoons water. Bring to a boil and simmer for 2 minutes.
4. Chop the crystallized ginger and stir into the sauce with the juice from half of the lemon.
5. Remove from heat and serve. Delicious with our beignets.
