1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 package (28 count) Andes Mint Candies
6 tablespoons butter, softened
1 cup sugar
1 1/2 teaspoons vanilla
2 eggs
confectioner's sugar

Makes approximately 3 dozen cookies.

1. Combine flour, baking powder, and salt in a small bowl. Set aside.

2. In a double boiler, over low heat, melt all 28 Andes Candies.

3. Using an electric mixer, cream butter and sugar until fluffy. Add melted candy and vanilla extract. Beat in eggs one at a time. Gradually add flour. Mix until combined.

4. Wrap the cookie dough in plastic wrap and refrigerate about an hour until the dough is firm.

5. Preheat oven to 350 degrees. Line cookie sheet with parchment paper.

6. Shape the dough into balls approximately 1 inch in diameter. Roll in confectioner's sugar. Place on a prepared cookie sheet.

7. Bake for 10 - 12 minutes. Remove from oven and let cool on wire rack.
