wine : For the cheese course we suggest a nice Sauvignon Blanc. New Zealand has some great representatives, and their acidity will cut through the creaminess of the cheese. If you are looking to splurge, try a Sancerre or a Pouilly-Fumé from the Loire Valley region in France.

Chevre is a generic term for French goat cheese. It comes in all shapes and sizes but the most popular form is a Chevre Log. The center is very white and it has a soft, slightly granular texture. The flavor is usually very mild and slightly salted, although herb-flavored Chevres are widely available. Our decision on the type of Chevre was based solely on what was at the Farmer's Market.

The types of Chevres that we bought come in small portions. The Cornilly Frais Jacquin is shaped like a small flat biscuit and the Pyramide Val Levroux Cendre is shaped exactly as you would expect - a small pyramid. The "cendre" indicates that it is coated in ash. To serve these cheeses we merely cut each portion in half a served one of each on a plate accompanied by grapes to each guest.
