2 cans black beans
1 can whole kernel corn
3-4 green onions
1/2 poblano pepper
1 medium tomato
1/2 tablespoon ground cumin
1 teaspoon oregano
3 tablespoons olive oil
salt

1. Open beans and corn. Drain each. In a large bowl, mash 1 can of beans to a smooth consistency, similar to oatmeal. Add remaining beans and corn.

2. Remove root tips from onions and discard. Slice entire onion very thin. Add to beans.

3. Stem and seed pepper by cutting a ring through the flesh at the edge of the crown, around the stem. Gently pull stem and seed cone together, and rinse pepper to remove any additional seeds. Slice pepper down the center and chop one half into fine cubes. Add to beans.

4. Core and roughly dice tomato. Add to beans.

5. Add remaining ingredients and mix well. Season to taste and serve at room temperature.
