entertaining 1 6-8 oz. wheel of goat cheese (the packaged log works fine)
3 tablespoons. olive oil
2 cloves roasted garlic
1 stem fresh rosemary
freshly cracked black pepper

To roast garlic, preheat oven to 300 degrees. Place unpeeled cloves in a ramekin, coat with olive oil and set in oven for 20 minutes or until garlic is a deep golden brown. Drain and reserve oil and allow garlic to cool. After garlic is safe to handle, simply pinch the clove between thumb and forefinger and the pulp will pop out.

1. Preheat oven to 400 degrees.

2. Brush a small oven-proof dish with olive oil reserved from roasting garlic.

3. To the bottom of the dish add one garlic clove, slightly mashing it and coating the dish.

4. Add half the rosemary stem.

5. Place the chevre in the dish and add remaining garlic, rosemary, and a sprinkling of pepper.

6. Bake for 10 minutes or until cheese is golden and begins to bubble on top.

7. Serve with fresh crusty baguettes for dipping.
